The stage in The Square will be busy throughout Sunday, with chefs ready to teach you new techniques to add to your cooking repertoire.
During the day, five cookery demonstrations will take place – featuring the work of award winning chefs and popular local restaurants.

There will be plenty of variety on show – so pull up a chair and watch some kitchen masters at work.

Adam Hadwen, who lives in Clanfield, will be showing his audience two ways of preparing meat that many people may not have considered before.

His demonstration will begin with making a duck ham salad and will focus on how you can cure and hang your own meat.

Confit of duck leg will demonstrate another cooking technique, which is a speciality of South Western France.

The duck used in these two dishes, along with most of the ingredients in the demonstration, has been sourced from Hyden Farm – the organic farm based near Clanfield.

Adam has used ingredients sourced from home as well – the rhubarb in his pickled rhubarb dish comes from his back garden.

The English tradition of tea and cake will feature in the pudding but perhaps not in the way you are thinking.

Adam will be making a honey cake which will include tea jelly, honeycomb, praline and green tea ice cream.

H3CS

The company which provides dinners to school children across East Hampshire and the rest of the county will be using their stage time to promote healthy eating for all the family.

They will be making a selection of crumbles, soups and cous cous, using seasonal vegetables with the emphasis on healthy eating for all.

Children will also be able to get involved with this demonstration – they will be able to help to make some of the crumbles in front of the stage. Hats and aprons will be provided.

Perhaps nobody knows more about getting the best out of local produce than Lainston House’s executive chef Andy Mackenzie.

He is described as a ‘great ambassador’ for local food and his work has certainly been rewarded – he has been named Hampshire’s best chef for the last two years running.

He and his team have secured a whole host of awards in recent years at their restaurant near Winchester, and you will be able to see some of those skills at close quarters when Andy takes to the stage.

Restaurants, cafes, takeaways, food producers, supermarkets – businesses in Petersfield and the surrounding areas have been waiting to find out who will win the awards in the competition’s first year.

Voting closed on Friday but to find out more about the competition and who was nominated in each category, please turn to page 5.
